Tasty Lemon Meringue Pie Microwave Recipe

This lemon meringue pie is elegant dessert for your party events. This is a microwave convection cooking recipe. 

cooking time: 30 minutes



Ingredients for Pie Crust 

1½ cup plain flour
¼ cup butter (frozen)
¼ cup castor sugar
2 tbsp ice cold water
1 egg

Ingredients for lemon filling

1 cup sugar
1 cup water
4 tbsp cornflour
grated rind of 2 lemons
50 gm butter (soft)
3 eggs (separated)
½ cup lemon juice 
3 tbsp sugar (extra)

Method for Pie Crust

  • Preheat the oven at 200°C at convection mode. 
  • In a large bowl mix all ingredients for pie and with the help of finger tips rub and knead in to a dough.
  • Roll the dough and press it into greased pie dish. 
  • Place on low rack and bake for 10-15 minutes till it is golden brown on 200°C convection mode.  

Method For lemon filling

  • Preheat the microwave at convection mode at 170°C.
  • In a microwave safe bowl add 1 cup sugar, water, cornflour and make a paste stirring it. 
  • Add lemon rind and microwave on 100% for 3-4 min. or till the mixture thickness.
  • Keep aside to cool.
  • Add butter, egg yolks, and lemon juice when it cook.
  • Mix it and microwave for 3-4 min. at 80% power. 
  • Chill the filling in the refrigerator.
  • Beat egg whites till forms peak and stiff.
  • Add sugar gradually and continue beating. 
  • Spoon the chilled filling over the pie crust.
  • Spread beaten egg white mixture over the filled pie crust.
  • Bake on low rack for 10-15 min. at convection 170°C till the meringue is golden at top.
  • Chill before serving.
  • Lemon Meringue Pie is now ready to serve.
